How To Make Carrot Muffins?
Here’s my simple recipe to make a healthy and moist carrot muffins.
Ingredients:
- 1pc carrot (big)
- 1/2 cup nuts
- 2pcs eggs
- 1/2 cup brown sugar
- 1tsp cinnamon powder
- 1tsp nutmeg powder
- 1/4tsp salt
- 1/2 cup cooking oil
- 1/2 baking powder
- 1 cup all purpose flour
- 50g raisins
Instructions:
- Peel and shred 1pc carrot and set aside.
- Crush 1/2 cup nuts and set aside.
- Beat 2pcs eggs.
- Add 1/2 cup brown sugar, 1tsp cinnamon powder, 1tsp nutmeg powder, 1/4tsp salt and 1/2 cup cooking oil. Mix well.
- Add 1tsp baking powder and 1cup all purpose flour. Mix until no white is visible
- Add the shredded carrot, crushed nuts and 50g raisins. Mix well.
- Grease muffin pan with cooking oil.
- Distribute the batter into the 6 muffins holder.
- Bake in a preheated oven for 20mins at 175°C.
- Remove from the oven and let it cool down.
